Kevin's Famous Chili

In the wise words of Kevin: "At least once a year I like to bring in some of my Kevin's Famous Chili. The trick is to undercook the onions. Everybody is going to get to know each other in the pot. I'm serious about this stuff. I'm up the night before, pressing garlic, and dicing whole tomatoes. I toast my own ancho chiles. It's a recipe passed down from Malones for generations - it's probably the thing I do best.” I agree, Kevin. I agree.



  • 2 Tbsp vegetable oil
  • 1 chopped onion
  • 1 red bell pepper
  • 6 cloves chopped garlic
  • 1 Tbsp chili powder
  • 1 Tbsp paprika 
  • 2 tsp garlic powder 
  • 2 tsp Osmo White Flakey Salt
  • 2 lbs ground beef
  • 2 cans kidney beans
  • 2 cans diced tomatoes
  • 1/4 cup of water
  • Sour cream
  • Shredded cheese
  • Green onions (chopped)



  1. In a large saucepan on medium heat, add oil, onions, bell pepper, garlic, and seasonings.
  2. After 2-3 minutes, mix in the ground beef, kidney beans, diced tomatoes, and water.
  3. Let simmer for 1-2 hours.
  4. Plate with sour cream, shredded cheese, and green onions.
  5. Don’t spill it!
